One of the easiest things in the world to make, and so, so tasty! The crux of this dish lies in the quality of your century eggs, but an old lady at the shop taught me how to shop smart. Soon I will compile a list of favourite places to buy century eggs.
- 3 Century eggs
- 1 pack tofu
- Soy sauce
- Sesame oil
- Peel your century eggs and halve. If you haven’t bought these types of eggs before, the best way to test how good they are is by hitting one end against the fleshy part of your palm; the more that the insides jiggle, the better the egg (a good century egg being defined by how sweet and gooey the yolk is).
- Unsheath your tofu, using a knife to loosen the sides before dumping it on a plate.
- Combine soy sauce and honey till it reaches your desired sweetness. Add a dash of sesame oil. Pour it over your plate of eggs and tofu, then garnish with whatever you want — coriander, scallions, chopped garlic, chilli, etc etc.
