Recipe: Soft-boiled Egg on Pumpkin and Avocado Salad



    • Lettuce
    • Avocado
    • Eggs
    • Pumpkin
    • Red onion


    1. Chop up your pumpkin into 1-inch-or-so cubes. Roast them in the oven at 200 degrees Celcius until you can poke through them with a fork. If you’re impatient, microwave them for a minute first, it’ll pretty much halve your cooking time but still give you that roasty flavour.
    2. Soft-boil your egg, put it in room temperature water, bring it to a boil, then let it go for three minutes. Run it under cold water to stop it from cooking, then peel it. Sorry, no way around that.

Peel and slice your avocado, and the red onion, and the lettuce

  • Combine and serve with your favourite salad dressing.


I sort of realized that this is a really stupid recipe. I’m sorry about that. We can’t all be perfect all the time.
